Cuisine with a Smile is a melting pot of techniques (“Traditional Cooking”, Sous Vide, Molecular Gastronomy, Fermenting, Curing, etc) and ideals (Low Food Waste, Small Carbon Footprint, Composting, Understanding and Living in Harmony with Nature).
We take great pride in the fact that a good portion of our menu items are made “in house”. We try to pattern ourselves after The French Laundry. We not only grow herbs & microgreens, but we make many of the components (pastas, curing, fermenting, smoking, breads, ice creams, sorbets, etc.) featured in our menus.
